chick pea - sweet potato - mushroom curry
Happy middle of the week! Had a wonderful relaxing evening at home last night with the husband. Even whipped up a wonderful dinner, two thumbs up on this one! I served mine over brown rice, but you could do quinoa or even some tofu noodles if you'd like.
