I have been trying to stay away from desserts, even healthy ones, as I have been working on my weight loss. For me they are such a trigger food and can lead to my overeating. However, Sunday I was dying to try a recipe I found on The Vegan Pact! This really was a very easy pie to make, and my husband said the crust was way better than any non-vegan crust he has had before. :)
Raw Apple Pie with Coconut Almond Crust
From: The Vegan Pact
Crust
1 1/4 cup raw almonds
1 1/4 cup shredded coconut
2/3 cup dates
2 tbsp liquid sweetener (honey, agave, maple syrup)
1 tbsp olive oil
Filling
5 apples, peeled and sliced thin (use whatever you’d like-we used Granny Smith)
1 apple, peeled and chopped
1 cup dates, soaked for one hour
1 orange, peeled and seeded
1 tsp pure vanilla
1 tsp cinnamon
1/4 tsp nutmeg

keeping on track made easy
I am a list maker.
I admit it.
And I love it!
"Sometimes" I get a little carried away, but for me keeping a list or journal helps keep me on track with any project I am working on - health being one of them. Here are a few ideas and options that might work for you as well:
Keeping a Journal
Whether you are trying to lose weight or work on a fitness goal keeping a journal is a great way to track your progress, make notes or write down your thoughts for the day. I have found that this keeps me focused and I love looking back seeing the progress I have made. When we started our work fitness challenge I knew that I wanted to accomplish a few things with my journal:
