mushroom & onion chimichangas - and vegan failure?

Wow, first I have to say my Etsy Vegan Redhead a Running Online Store is rockin! I have been adding cell phone cases and other items, with still MORE items to come.  Thank you to everyone who has purchased from me.  My goal is to get everything shipped out as quickly as possible.

Today I have a little bit of this and that to chat about, but hey lets start with some FOOD!  I think last Friday on Facebook someone linked a non-vegan Chimichanga recipe that looked good, but would taste BETTER being vegan.  I couldn't get it out of my mind, so Saturday for lunch I was on a mission to make a vegan (and healthy) Chimichanga!   The guacamole cream sauce I made to top them with....omg, to die for!  You'll find that recipe here as well. These also made great leftovers the next day.

Mushroom & Onion Chimichangas


Ingredients
1 Yellow Onion, sliced
2 Cups Mushrooms, sliced
2 T. Vegetable Broth (or more as needed)
2 T. Garlic (I cheat and use the jar kind)
1 Small Can of Diced Green Chilies
1 15.5 oz. Can Black Beans, drained
1 t. Garlic Powder
1 t. Cumin
1 t. Black Pepper
5 Whole Wheat Lavash (or tortillas)

Heat over to 350 degrees.  Over med-high heat add vegetable broth to your skillet and sauté onion, garlic and mushrooms for 5 minutes. Add more broth if needed, but not to much. Stir in black beans, green chilies and spices. Cook for another 3-5 minutes until warm.


Remove from heat.  Warm lavash for about 20 seconds in microwave to make softer to work with.  Add about two big spoonful's of mixture (more or less depending on the size of your lavash), fold in sides, and then top and bottom.  Secure with tooth picks and place on baking sheet.  Lightly spray the top of the Chimichangas with cooking spray. Bake for 8-10 minutes or until lavash is brown and crisp. Remove and let cool.

Top with Guacamole Cream Sauce, remove toothpicks and ENJOY!

Guacamole Cream Sauce

 Ingredients
2 Avocados
2 T. Garlic (I cheat and use the jar kind)
1/2 Cup sliced jalapenos
1 t. Garlic Powder
1 t. Cumin
1/3 Cup Salsa

Add all of the ingredients to Vitamix (or blender) and blend until creamy. Great chilled with chips as well!

Okay, Vegan Talk - Vegan Failure?

I have had mix reviews regarding my tattoo from co-workers and family.  Like, "what are you going to do when you eat meat again?"  It's frustrating that others don't understand that I have made this lifestyle change not just to drop over 35 lbs., but because it's a heath and ethical reason for me.  Eating vegan is something I want to do the rest of my life, be that 40 years or 5 days...however long I should live.  You know, is what it is, and I can except their not understanding and move on.  My vegan dilemma - leather goods. I buy cheap shoes so no worry there, but I have a handbag issue.  I like love fine handbags, and leather ones at that.  This is something I really want to over come, but does that make me a vegan failure? Eating vegan, easy. Handbag vegan, help me!! I have started searching online and found some pretty cool bags, but not sure which company would offer the best option for me.  Have you purchased a vegan bag online that you're in love with? Who is reputable to purchase from?

I really want to live a good clean vegan life, but I worry about that day I am approached by someone (maybe a better vegan than myself) who confronts me regarding my handbag choice.  I really do want to do the right thing.

  1. I haven't purchased any leather since becoming a vegan 1.5 years ago, but I do still have leather couches in my home, accessories in my closet. I won't consciously purchase anything made of animal products in the future, but I'm not going to throw away what I have. In my opinion, there's no such thing as a perfect vegan. We're all just doing out best to live as cruelty-free as possible! Your issue may be leather, mine is the possibly non-vegan wine I occasionally drink when dining out. I won't report you to the vegan police if you don't report me. ;)

  2. Katherine, are you using 2T. of fresh and 1 t. of powdered in these recipes. I want to make sure I'm not using too much when I make these. They sound delicious!

    Here's my take on the leather. There are people who are going to eat beef, so there will be leather. I'm not contributing to it, because I'm not eating it, so I don't have a problem with buying leather. It would already be there. Does that make sense?

    1. Yes, Lee Anne regarding the ingredients. And you can use more or less to your taste as well.

      I have found that I don't know if I will ever be able to give up my leather handbags. Maybe someday I can work to it. LOL!

  3. I do enjoy Mexican food and I think I have everything on hand to make these! Thanks for sharing.

    I follow a whole foods plant based diet but I am not vegan. Like you I love a good quality leather purse, fine leather shoes and have a leather couch and chair!

  4. Lee Anne makes a good point. I think if you go with what I think is the standard of what a vegan is, its all about what you don't eat. Period. Using animal products doesn't make you a vegan failure in my opinion or in the strictest sense of what a vegan is. The First Nations people honoured and thanked the animals for giving them sustenance & they used all the body so none went to waste. I like to think that by using every part we can so none goes to waste, we are honouring that animal too. I guess its something we all have to think about & come to terms with individually. No judgement here!

  6. That whole "giving thanks" for TAKING the life of a sentient being who never agreed to be killed is BS. It's a way to feel better about contributing to murder. Simple.
