roasted veggies & chickpea salad

Being vegan you eat a LOT of veggie dishes and you are reminded of that when you're asked, "what's for dinner?" and you reply back, "something with veggies." and then you get back jokingly, "isn't that what we always have??"  Okay, not all veggie dishes are the same!  Point in case, dinner last night...OMG I made the most wonderful Roasted Veggies & Chickpea Salad EVER.  This have great flavor, tender veggies and oh so healthy!! 

Roasted Veggies & Chickpea Salad

Ingredients
1 Cauliflower Head
1 Broccoli Head
1 Bunch of Asparagus
1 large Onion, thinly sliced
1 can Chickpeas, drained and rinsed
3 large cloves of Garlic, minced
1/2 Cup Sun Dried Tomatoes in oil, drained
1/3 cup Kalamata Olives, chopped
2 tbs Balsamic Vinegar
2 tbs Sriracha (less if you like not as spicy)
1 tbs Crushed Red Pepper Flakes
Vegetable Broth (for cooking)
Salt
Pepper

Directions
Preheat the oven to 425. Clean Asparagus and cut into bite size pieces.  Clean and chop up your broccoli and cauliflower into florets. Spread out onto a baking sheet lined with parchment paper and lightly spray with Olive Oil Cooking Spray.  Sprinkle with a little salt and pepper.  Roast in the oven for about 20-25 minutes or until vegetables are tender.
 
While the veggies are roasting, heat a large skillet over medium heat and add a little veggie broth. After a minute or so add the onion and garlic. Saute’ for about 5 minutes stirring often. Add the chickpeas and cook until chickpeas are lightly browned stirring often. About 5-10 minutes.
 
Once the roasted veggies are done roasting toss them in large skillet with the chickpeas, onion and garlic. Add the sun dried tomatoes, olives, and drizzle balsamic vinegar and Sriracha. Season to taste with salt, pepper and a dash of crushed red pepper flakes.
 
Note: This is a great meal to add veggies to that you might need to use up!  :)
 

Birthday Shout Out

Monday our sweet girl Mazie celebrated her 6th birthday!  She was our second Cavalier and belongs to the boy child.  If our son is home, we don't see much of Mazie, as she loves to be by his side...or in his bed sleeping.  Mazie is a bit "special" she loves chasing lights and LOVES the pool.  Crazy dog gets on the first pool step and waits for you to toss a rock in.  She'll push that darn rock around the first step for HOURS I kid you not!  If she pushes it off onto the second step...then she'll wait for you to retrieve it for her lol.  Not sure she's playing with a full deck, but we love her!  Happy birthday Mazie!
