tofu scramble & something for the dogs

Happy Monday to you all!  It was a slow starting day today as we celebrated Father's Day a little too hard yesterday lol.

Father's Day morning started with J's favorite vegan breakfast - Southwestern Tofu Scramble.  If you are trying to cut eggs, but love a good scramble you really have to give this a try!  J and I both agree that the Tofu actually taste better than eggs ever did.


Southwestern Tofu Scramble

Ingredients

12 oz. Tofu Extra Firm (pressed)
teaspoons ground Turmeric
2 tablespoons of water
3 tablespoons vegetable broth or water
1 Small Red Onion
Several Peppers (I like red, orange and yellow)
1/2 teaspoon Garlic Powder                                            
1/2 teaspoon ground Cumin
1 tablespoon Red Pepper Flakes
1/2 cup Sliced Jalapenos
1/2 cup Diced Green Chilies
1 cup Spinach
2 Tomatoes Diced
1 Avocado (for topping)                                           
Salsa (for topping)   

Preparation

Wrap tofu in several layers of paper towels (to absorb liquid) and press for about 10 minutes with something heavy (some day I will have a Tofu Press!!).  Place tofu in a bowl and using a fork mash to look like eggs.  Add Turmeric and 2 tablespoons of water and mix.  This will give the tofu a yellow look (and will stain, so be careful!).

Heat vegetable broth or water in a large skillet over medium-high heat.  Add onion and peppers; cook, stirring often until they soften 3-5 minutes.  Stir in garlic powder, cumin and red pepper flakes. Add jalapenos, green chilies, spinach, tomatoes and tofu mixture (add more vegetable broth if needed).  Toss all together until warm and remove from heat.  Top with avocado and salsa.

This normally makes 3-4 servings. I will put the leftovers in the fridge for the next day and they warm up great!

The good food didn't stop there - lunch was at Kona Grill for some amazing Vegetarian rolls!  I feel like I put on 10 pounds this weekend from all of the food we ate...and we did skip the gym yesterday, but it was Father's Day so thinking it was okay due to the holiday!

Now, my love for cooking is not just for humans - I love cooking up yummy treats for my dogs! If you have ever bought dog treats at the grocery store and read the ingredients list it might not only make you ill, but your dog ill as well.  There have been many recalls on dog treats coming from China in the last few months - okay, China?!?  Just that is wrong! However, they do make treats and send them to the U.S. to sell, and they have been making dogs very sick.  Making my own treats I know what I am putting into them and feel safe sharing them with my little fur-babies.

This is one of my favorite summer treats for the dogs that is SUPER easy!!

Doggie Veggie Ice Pops

Ingredients

8.5 oz. can of Peas & Carrots (you can use any veggie mix)
1 teaspoon Garlic Powder
Water
Ice Cube Trays

Preparation

Spoon veggies into ice cube trays leaving enough room for water.  Lightly sprinkle with garlic powder and fill with water.  Freeze until frozen solid.  Pop out of the tray outside and let your dogs enjoy!!


If you make green smoothies (as long as there is nothing in there that will harm your dog) and have leftovers, pour into ice cube trays and freeze for your dogs.  They love them!!
